It’s the same for me, used to have good signal but now only 2bars and 4g which hardly connects or is slow.
this is not just at home but all over where I travel, even around London poor.
my home 5g modem also only ever shows 2 bars also

The onscreen bars are only guides and can vary between phones for the exact same carriers.
If you are having issues with poor data speeds in certain locations, you should report those. The "number of bars" is unlikely to be the direct cause.
