I have a 14 day travel eSIM with unlimited data.
However I am now unable to use this and my phone is telling me I've used up my 2GB allowance and I can't contact EE anywhere since the chatbot just says it can't help and ends the conversation and I can't call or text because it is a data only esim. How do I get help???

Also some apps (eg tinder) don't seem to work while connected to mobile data. Overall a terrible product.

Are you in UK?
An EE Travel SIM should have unlimited data. How much did you pay for it?
What does texting AL to 150 from your no. fully report verbatim (it is free)?

You sure your phone's Mobile Data counter is not set to be limited to 2GB pm?

Yes I'm currently in the UK.
Texting 150 does nothing, my phone just displays "waiting to connect" since it's data only. I bought the 20 pound option which should be unlimited. My phone data isn't limited to 2GB, although from looking at it closer it is set with a warning (and now disabled) which may be what confused me. I activated the eSIM on 15 Aug and the email says it should be active until 29 April so I'm well within the time period as well however I don't think it's worked at all today.

Even data only SIMs are able to send texts & make calls as long as you can pay for them or they are free. "Data only" just means it has only a data allowance, not that it is incapable of doing anything else..

Data SIMs aren't provisioned for calls and texts, so these services won't work.
It's worth noting too that these SIMs have our moderate content lock setting enabled as standard, so some adult-focused websites may be blocked.
Can you please describe what is happening when you try to use data at the moment?
