I am transferring from BT to ee mobile account and have been given new replacement sims for phones. Our numbers will not be changed. Before I do this - will I lose all historical messages on the WhatsApp existing on my phone ?

Changing SIMs should not result in a loss of any app data - WhatsApp or otherwise.
You'd have to check specifics with WhatsApp though - EE didn't design the app, they provide an internet connection for apps to work.
