For the last month or so, I've had issues with not being able to access my data. I definitely have data available to use but whenever I switch it on, it doesn't work. Any help would be appreciated 🙏 thanks!

Does this happen in one specific location, or is it more general? You mention switching data on, which implies you're leaving it off most of the time? Try leaving it on permanently.
What happens when you try using data? Are you able to make & receive voice calls?
