A Business Account can only be turned back into a Consumer Account by calling Customer Services on 150.
As to why the store set it up as a Sole Trader/Self-Employed account is unclear, but typically there is a self-certification process for this that you have to agree digitally before the sale can proceed.
Your best bet is to call Business Customer Services and explain the situation as best you can to see how you can proceed.
The process for Student Discount however can only be done on Online Upgrades on a Consumer Account. You can read more on Student Discount here: https://ee.co.uk/mobile/student-discount/student-beans-offer
