I recently had my (out of EE business contract) Ipad pro replaced at an Apple Store as it was faulty. It was a wifi/sim model and I forgot to remove the SIM when I handed it in. Got the replacement, hey presto, no sim.
Note I'd had a design deadline and finished work in the wee small hours and had about 3 hours sleep so I was a space cadet. Had to go collect that day, it was the last day I could do.
Was at a shopping mall and so I went into an EE store. Asked for a replacement sim, also asked if we could look at my 5GEE mobile broadband contract as its been out of contract for months and I've been too busy to do anything about it.
Over an hour later, left the store with a sim for my old ipad pro, a new ipad pro and an unlimited data contract sim for that and a new contract for the dongle (no new sim).
Was ready to get a new ipad pro as the current older model is a bit software glitchy with the software I use a lot and it as time. i was super pleased about the unlimited sim. Was happy about the new contract for the dongle (which I didn't upgrade the hardware on, as there's nothing new or better on offer yet).
But i've just logged in and checked everything over as I was so tired that day. and the sim for my old ipad contract, it isn't a replacement, it's a new contract which expires in 2 years time - granted it's cheaper than the old one with more data - but that's not what I asked for. I just wanted one to replace what had gone missing. Whilst decide what to do with the old pro - keep as a spare or sell.
And to add to that, the salesman said he'd get me deals that would work out cheaper than what i'm paying now and it's not - it's more expensive £136 a month instead of £133 what I paid before - ok its only £3 more, but that's not the point, that's not what he told me.
Can I cancel the sim for the old ipad without incurring any penalty? I only got the new contract 4 days ago.
The contact mentions a 14 day cooling off period, but guess what? I searched for cooling off period on the EE website and there is nothing there and the chatbot wasn't much help.

EE retail stores do not have a 14-day change of mind period, however you could cancel the out-of-contract SIM by calling EE Customer Services and giving 30 days notice.

This is a new sim, they cancelled my old contract and gave me this one instead, instead of giving me a replacement as I had requested. It's a 24 month contract.

You have no statutory cooling-off period when buying from a High St. store. However you still have Consumer Rights to be sold goods as described & fit for purpose. If you made it clear that you wanted a replacement SIM for your old iPad then you were mis-sold.

Hi @Entando
Welcome to the community.
I recommend popping back to discuss this with the store staff. If a mistake has been made, they'll be able to look into it and try to find a solution to it for you.
Keep us posted on what happens please.
