I need to set up direct debit as it got deleted by mistake

You can do that on the app once it's back up and running or the website via my ee

You can change your bank details under Bills & Payments > Manage Direct Debit.
You will need to be set up as the Bill Payer under Account Settings > Manage Numbers to do that though.
