Hello. 

Is there any way I can request a copy of my calls for a certain month? I don't currently have itemised billing.

There isn't a way unless you have Itemised billing.

Won't they show in your call logs on the numbers you've dialled.

Your phone's call logs will show all incoming & outgoing calls with their dates & times.

Outgoing call data can be obtained via the SAR process which can take upto a month.
