I need to submit my call history for September 2023 to the police as part of a criminal investigation. I am happy to pay.

Welcome to the community.
If you were already paying for full bill itemisation, you can download your bills through your EE online account. These will show outgoing calls and texts.
If you weren't already paying for itemisation, then that information won't be on your bills.
To request more detailed information for a criminal investigation, I recommend speaking with your solicitor.

The Police have their own processes for obtaining telecoms data, they don't need to ask you to obtain it.
I am unsure how far back, records go - but September 2023 is beyond the remit of a consumer request in any case.

I have checked my online account and it looks like I do pay for itemised billing but the bills don’t go back more than one year. I need September 2023.
I have not been appointed a solicitor yet. The police have been in touch with me directly to try to get this information.
It would provide a really important part of an investigation. So please help if you can.

As mentioned above, legal authorities have their own means to access telecoms data and they should not need to be asking you. There's a couple of reasons why they might be doing this
1: The officer's you're dealing with are not familiar with the process they should be following, and perhaps need a reminder from their supervising officer.
2: The data they require is too old for even their process, and they're hoping you already have it. Great if you do, but an exercise in futility if you don't. EE-CS can provide copy bills older than the 2year cutoff for online access, this will only provide outgoing call details and not incoming.
