What is the name of the EE BB plan you have ordered including its speed?
If you've ordered a 1.6 Gig plan you could well need the ONT changed.
Charge service to what? Why would that speed things up?
What does BT Wholesale Broadband Availability Checker > Address Checker estimate for your address? Post the whole table, the text below it and the line above it, blanking out your address.

@Saintrat You may also wish to say if your FF Full Fibre was with another Alt Net, EE only use OR Openreach for there FTTP service. No one else at all. Edit:- FTTC currently awaiting your FF Installation to take place at a later date.
If there is a reasonable Mobile signal you should look at some kind off stopgap to keep Internet going, and EE may be able to assist you with that and advise what cost is or would be involved also.
You have to make sure that the Alarm system to be used is fully compatible for operating on a Fibre only connection when ever that get's completed, nothing to do with EE. Also do consider BBU system at additional cost from EE. See the link and click on the shop.

@Saintrat Once your picture get's cleared for general viewing it can be looked at, currently it's waiting for the approval. Delay would possibly mean there is NO Full Fibre and it has to be Installed, EE gives you a date that OR would intend to try and do it in....
With a FF500 package you do not need anything faster, the Alarm system is WELL covered by speed....

The congested underground duct could well have much to with the delay.
No need to tell EE about mother-in-law coming to stay. They wouldn't be interested. 500 Meg should be sufficient for both of you.
