I moved from BT on Thursday 26th. My activation date was given as Monday 30th - based on my equipment arriving today (28th). According to the Royal Mail tracker it won't arrive until Tuesday 1st Oct. I tried to change my activation date using the app but it gives an error. So how do I go about this?

You'll need to call EE to change your activation date. This will require a new appointment with OR who are hard to schedule.
Why not leave it be for the sake of 1 day. You should be able to use your BT SH2 in the meantime.

Thanks!
If it's the case that there will still be an Internet connection I'll not bother then!

@MrMustard As @XRaySpeX has pointed out to you just ride the wave, your BT - EE is mostly transparent switchover and everything you have on just now works on both isp services, just wait if you get e-mails when its all done. With such a quick transition it does not take much to cause the delay, will probably all turn up Monday you never know. Just make sure to be happy with it all before you do any returns!

It should almost seamlessly switch from BT to EE, as on same OR infrastructure, with a short downtime in between ranging from a few mins to maybe a coupla hours.
