I’m going to buy a sim free iPhone 12 outright to replace my current iPhone 6s.
Can I just simply switch the SIM card and be ready to go with the same flex plan and the same number??

Yes, you can put your SIM card in any phone, so buying one outright will be no problem, as your account and everything is on the SIM card.
