UK customer here, Will my Samsung 21 ultra 512gb be using the processor exynos? Can I change this or opt for snapdragon

All of the Samsung Galaxy S21 Ultra phones that we stock have Exynos processors.

From what i've seen, the Exynos 2100 chip is a lot better than the Exynos 990 of last year.

Just from that battery test, you can see the improvement
You'll be very happy with the S21 Ultra

If you want a Snapdragon variant you need to purchase it from Asia or America.
All Europe use exynos.
Like stated there's a vast improvement this year though.
