Looked on my app and for been a loyal customer ee will wipe my upgrade cost which isn't due till march 2022 but I can only pick 2 phones samsung S21 or the Samsung flip and go on a more expensive plan and give them my old phone Samsung s10 not much of a deal just to get more money out of me

You are wanting to break a legally binding contract to upgrade.
EE are offering to waive the early upgrade fee but there would be conditions. This is not anything against loyal customers this is because phones these days are expensive.
