I have a 64gb iPhone 11 on a business contract, if I was the buy the iPhone 11pro max 512gb, could I put my existing contract SIM card into this phone and carry on with the same monthly payments? Or would that change my current contract?

You can put your EE SIM into any compatible phone, providing it's not locked to another provider.
It's your SIM that carries your number (and by extension, your subscription & account), what phone you use it in is irrelevant.
