If I purchase a 'sim only plan' with a month left on my current pay monthly contract, will my 'sim only plan' commence as of the purchase date or can I wait to activate it once my current contract terminates?

If you take out a new pay-monthly (SIM-only) plan, that will begin from when you purchase it and will also have a new number - meaning you have 2 plans running.
If you have an existing pay-monthly plan and simply change it over to SIM-only (either online via myEE, or by calling EE C/S) then that is just a change of payment plan on your existing number and is effective immediately (if you do it by phone) with no overlap.

Your SIM-Only plan will start when you purchase it or at least when it's delivered. Why don't you upgrade your current plan to SIM-Only & then there'll be no overlap?
