Hi updated my sim plan but have not received a new sim as yet nor can I access iTunes and Apple TV which is part of my new plan since 21st feb

Welcome to the Community
If you have upgraded your SIM plan you don't usually receive a new SIM card unless you have specifically asked for one.
Your new SIM plan will only start when your previous plan/contract ends.
Has your new SIM plan began already? You can select your inclusive extras using the EE app.
Alternatively you can do so by texting “Pick” to 150.
Once you have chosen your extras just follow the text message prompts to activate them.
