You've posted in the Android section of the forum so I'll presume that's what you have.
My Android-15 device has a free-text field for SMSc number, fully editable. Which Android version are you running, that doesn't allow this to be edited?

Thanks for letting us know @Marko1903
Could you try checking for updates, then restarting your phone and try again please?

There's no updates and ive tried restarting phone, removed sim and tried it again. But still nothing.
I upgraded last year as my phone broke and issue as only started with this phone. Its the same sim card as old phone. Do you think I may need a new sim card

In what did you old phone break? Were you able to send texts with this SIM in that phone? Are you able to test it now?
IMO, "issue only started with this phone" is a big red-flag. Now you just need to prove it.

My old Phone wouldn't turn back on after a restart, Phone still wont turn on now. Everything was OK with that phone sending messages problem has only started with my new phone since i upgraded

I'd suggest a 2way SIM-swap as the next step. Find someone willing to do so, an EE retail shop should be able to if all else fails..
1: Put your non-working SIM in a known working phone and test sending SMS - what result?
2: Put a known working SIM in your non-working phone and test sending SMS - what result?
This will prove whether your SIM or your phone is the issue. Then you can direct efforts accordingly.
