I think someone's installed an esim on my device and is hacking.  Is this possible?

How can someone install eSIM until you give phone to him or remotely give access?

eSIM can only provide you call, sms and internet.

If you still want please provide more details or simply remove the sim profile if you think if it’s not yours and you don’t need it.
