Is +44 7487 367688 a scam or a legitimate EE phone number?

Yes, that's a scam. EE doesn't currently have a points based rewards system.

I'd go with scam. What did they say?

They were talking about a reward points system, talking about redeeming points for products

What if you give them your phone number?

No I just put my phone number in,  I'm usually very savvy about scams but this on got past me.  Should I do anything?

I'd recommend just being vigilant if receiving calls or texts from unknown numbers @Aud54

Needless to say I won't be clocking on the link!

I got one just now (6.43pm) exactly the same but the number was 07311081920
