When transfer my old phone which had an e sim to my new phone it didn’t give me the option to transfer and now I can’t access my number as my old phone is wiped

If you switch on the old phone, is there no service at all, or is it still showing signal?
The old phone would usually only be wiped if you have reset it back to factory settings.
If you have done that, you would need to get another physical SIM or eSIM. This can be done by calling our customer service guides from another phone, or if you are the account holder, you can visit an EE store with photo ID (either a driving licence or passport) and they can activate a SIM or eSIM with your number in store.
