Hi,
I recently purchased a new sim from EE and gave EE my PAC from my old provider.
My question is should I wait for the whole transfer to be complete ? Or can I put the new EE sim into my phone and the number will just change?
Or if put the my old SIM card with old provider in my phone until the new SIM card has been serviced will that mess anything up?

If you've provided EE with your PAC already, that will serve to port your number in and replace your temporary number - normally the following working day after activation.
Calls & texts to your ported number will continue to route to your existing SIM/phone until the day of the port-in. All manner of strange things are possible on the day of the port, but by the evening it should have settled down and your ported number will then be active on your new phone.
If it's important for you to be contacted on your new phone on the day of the port, you can give your temporary number to your contacts.

I would put the sim card in the phone as it will show EE that you have received the sim, and its active on the EE network

Insert your new EE SIM in your new phone and that will serve to activate it. A day or so later, your PAC will be used to port your existing number into EE.
There is no need to use your existing SIM in your new phone.

And everything will happen by it’s self, as in the old number will just replace the temporary one ee have attached to my new sim? I don’t need to switch I message off or anything?
But until the switch is complete and the new sim has my old number people will have to text me on the temporary number ?
