You can swap to an eSIM through the EE app. Just click Manage > Settings > Replace My SIM.
Alternatively you can scan a QR code to install the eSIM through your MyEE Online Account
Your existing physical SIM still needs to be active for either of these options to work.
If you have lost your SIM or it's no longer working, you'll need to call customer service on 150 or pop into any EE store with photo ID for a replacement SIM or eSIM

There is only an option to order a replacement physical sim

Are you on a pay monthly contract? eSIM is not available on PAYG.

That'll be why then. EE do not currently support eSIM for PAYG.
