I wanted to get an e sim to use while on holiday, but cannot seem to install it on my Samsung a26. Is this phone model too old?

Different variants of the Galaxy A26 support different SIM-types.
I believe the 5G version supports nano-SIM + electronic-SIM, the 4G versions are physical SIM-only.
