Month 1: lets say i buy a £15 pack and get 15gb of data and i only use 5
Month 2: 10gb will be rolled over and i’ve now got 15 from that month so i have 25GB of data and i still use only 5GB
Month 3: does that mean the data from month one will be rolled over to month 3 so that in month 3 i will have 35gb of data

No, @uuuuuuulhap , you can't roll over rolled data. Any usage is taken 1st from pack data. So you get in each month:
- 15GB of pack data of which only 5GB is used.
- 15GB of pack data of which only 5GB is used + 10GB of rolled over data = 25GB total.
- 15GB of pack data + 10GB of rolled over data = 25GB total.
Your usage is taken from your pack data until that is exhausted before being taken from rolled over data.
