I’m wandering what options there are for having a pay as you go sim for both me and my girlfriend on one account. I know you can do data sharing, but I just want to pay two pay as you go subscription packs from the one account. Or should she set up her own account and just use my bank details?

Data sharing is a benefit of having multiple pay-monthly phones on the same billing account. It's not available on PAYG.

With PAYG you can add (& remove) any nos. from any PAYG a/c.
In your online MyEE: Home > Plans & Subs > Manage numbers > Add another number > Link EE mobile or SIM.
Of course, there'll be no data sharing.
There are no bills with PAYG & therefore no bank details are required.
