First time buying sim in UK

This is my first time buying a SIM since moving to London. I need a SIM for my phone and I'm trying to get a pay-as-you-go eSIM.

The problem is that every provider keeps asking for my UK phone number during the sign-up process. But how am I supposed to have a UK phone number if I'm trying to get one in the first place?

Has anyone else run into this? Any ideas on how to get started? I'd prefer an eSIM rather than a physical SIM.

There is no PAYG esim. 

To get a SIM go into any supermarket or EE store.

EE standard opening hours are Monday to Friday, 8am to 9pm - Saturday and Sunday, 8am to 8pm.
