The iPhone 17 Pro Max 256GB Silver has been a very popular choice recently. Dispatch guidance while placing the order on 15th was - Available to order (Expect despatch in 7 days).
We've fulfilled all orders that were placed up to 18th December, so I'd have expected your order to have been processed by now, or in the next day.
It may be worth giving Customer Service a call on 150 from your existing EE phone, or the number found at Contact us | EE, so a guide can check if there has been any reason for a delay on your order.
If you haven't done so already I would recommend downloading the DPD app, so that soon as this device is ready to be shipped you will be notified with the tracking details.

Usually despatched within 7 day.
it could take longer because “usually” is a very loose term.

I ordered on the 15th December and it feels like the longest wait, really hoping it is a first come first serve thing

Devices will be sent out on a first come, first served basis, so you don't need to worry about anyone jumping in ahead of you.

That’s untrue I ordered on the 12th dec and ee have said they have my order but awaiting a phone for me and still no dispatch date.
