I am trying to add my NHS EE perk to my order, but did not have a the option To do. Previously I done it through live chat which I can see is now non existent.

Discount codes may only be applied at PoS when buying a new contract or upgrading, not mid-term.

Why do you keep telling people this?? Your are incorrect and have been told you are incorrect before. You have 30 days from taking out your contract to add a perk code. You can either ring ee or do it through chat.
