Using our mobile phones in the Republic of Ireland

This enquiry may be about Add-ons, but I've chosen the Roaming forum for this enquiry.

 

My wife and I have EE Sim Only plans. We will travel to the Republic of Ireland (ROI), via Northern Ireland (NI), for eight days at the end of May this year.

 

What would be the best/cheapest way of continuing to make calls/sending texts to the UK, including NI, as well as calling/texting numbers in ROI? The arrangement is only required for eight days and should be quick to set up/cancel.
