I'm trying to send an email to my phone as a text. I believe I need the carrier gateway address for this. What is EE gateway?

Email & text messages are two different things, and I suspect you may be trying to use an older phone which sometimes had menu options for using third party services.
Who is your email provider, and are you using an Apple/Android phone?

Im android. using outlook. Trying to send an email to my phone using this format <phonenumber>@mms.ee.co.uk but I receive no texts

Forget what you're trying to do - email & text messages are two different methods. The @mms.ee.co.uk method you're using won't work.
If you want to use email on your phone, then you should set an email account in Outlook or your phone's email app.

What Im trying to do does work for other people. Perhpas EE is dfferent.
When I try do it backwards, and send a text to my email address I get an error on my phone saying "service not activated on network"

Which network are those other people using? You used to be able to very similar to (what I think) you're trying to achieve by using the orange.net domain.

That method is no longer available. I think it was when it was Orange & maybe the early days of EE.

Sending a text to an email addy is supported but it goes as an MMS for which your phone need to be set up for. It is also chargeable.
