I am considering moving to EE.
Looking around the forum there have been problems receiving OTP messages after porting in a number.
Will everything transfer smoothly?

Predicting the future is impossible. For what it’s worth, I transferred my number to EE a couple of weeks ago and haven’t encountered any problems. My old number was an Orange EE number anyway. So porting issues wouldn’t have been an issue for me.

EE has about 14m mobile users and a few posts about issues are not representative of a wider problem.
I would suggest checking coverage and trying out a PAYG SIM to ensure coverage meets your needs.

Would it be correct to say when I receive the EE SIM I just insert the SIM and everything transfers over, including the Apps. The only thing I would need to do would be to download the EE app?

I am going Samsung to a new Samsung. I have now ordered a PAYG SIM and submitted a PAC with the order.
Presumably, EE won't activate the PAC before the SIM is activated.

The nature of a support forum such as this, is that users tend not to post to say "my service is good, thankyou" - the majority of posts will be from users requesting help with service problems, and regular users giving that help.
Your new EE SIM will have a temporary number assigned when you first receive it. If a PAC is supplied as part of the order, that will be submitted when you first activate the new SIM onto EE's network.
A port-in date will be set then, usually the following working day. This assumes activation during normal working hours - if during the evening, add an extra working day to these timescales.
