I have deleted an iMessage chat but forgot to save the number I received them from. Is there any way to recover this number?

If you have a back up of your iPhone, at a time when the message was present on your iPhone, then you should be able to restore your iPhone from this backup and the message. 

 

If you haven't then I'm afraid its gone.
