My wife and I have both just upgraded to a Pixel 11 Pro XL phones and the 5G speed is very slow. Around 60mbps.
We have opted for eSims and now our numbers show up as +44000000000?
What's happening?
Will this correct itself in a few days?

Have you tried restarting your devices.
You might need ask EE to refresh your lines.
As for speed this is subject to demand, coverage and if there are any faults. There is no guaranteed speed on EE mobile network.

Were you on EE before and what sort of 5G speeds did you get?
Helps to try at different times of the day, and in different locations. My Pixel 11 Pro XL has no issues, I get similar speeds to my old phone.

Yes, we have both been with EE for years. We were getting speeds of around 300+Mbps.
Both new phones have dropped to aroung 60Mbps since upgrading and transferring to eSims.

Yes, I've tried restarting the phone, disabling Adaptove Connectivity, switcing Aeroplane Mode on and of etc etc.
We usually get aroung 300+Mbps.
It's very strange that both new phones are the same?

The SIM number usually updates after a while and I wonder if that kicks off the correct operator settings?
Also worth checking that all your Google services are up to date, under, settings, google services, all services, system services.
