I’m looking to reduce my bill by upgrading my plan only. Does anyone know how to do this without having to ring or go into store?

If you are within your minimum contractual term, then you cannot normally do this as you agreed to those payments.
If you are outside your minimum-term, you can request a change of price-plan either by calling CS or following the "upgrade now" links on your myEE online account and choosing a SIM-only plan.
