I requested and received a list off all my outgoing calls for October, it only show calls that connected. Can I get a list off every number I dialled whether it connected or not?

Welcome to the EE Community!
The internal call logs on your handset can be cleared at any time, and depending on model this may only store them for a certain time period.
For us internally calls are only logged if they connect, and by default we only itemise calls on your bill if they're charged outside your allowance.
It is possible to request full itemisation for an additional fee, but you can't pick and choose what's included, and it's not possible to backdate this.

@markybee777 No, it’s has to be a connected call for it to register, that’s does include voicemail. Your device call logs will show a everything though

Can I delete numbers from my call log history? I am being accused of ringing someone and with holding my number late at night. I need to prove it wasn't me!!

Just to add, I didn't ring them, and I'm not asking if I can delete the number so I can prove it wasn't me, if I had done it I would own up to it

This statement raises more questions than answers! Are you the subject of a criminal investigation, or is this just a family/friend dispute?
For a criminal investigation, the burden of proof is on law enforcement, to prove an offence - not for the accused to disprove it. A family/friend dispute is another issue....
Yes, telephone call logs can easily be deleted. Much like any other data or content can be deleted.
