How do I switch to a cheaper unlimted data plan on sim only?

I seem to be paying way more than the current offers. The £23 one would suit me, I'm paying too much just now

There are so e good deals with additional benefits on SIM only.

You can't downgrade to a cheaper plan mid-term, but only in your upgrade window from 30 days before end of term.
