Hi there, i was wondering how i would cancel my monthly contact and switch to sim only?

SIM only is still a pay-monthly contract, just without the device element - EE only provide your network service/airtime.
If you're outside your minimum term, you can change your plan to SIM-only by calling CS on 150, or following the "upgrade now" option on your myEE.
If you're wanting to go onto PAYG which is not a contract, then you can give 30days notice by calling EE CS, and specifically request a transfer to PAYG on your cancellation date.
