Last Wednesday I did a upgrade to a iPhone 12 Pro Max, I was informed that I would get the phone within 7 days, but after looking at all the posts on the forum, I can see it being at least 4 weeks plus. Why did the salesman tell me I would have it in a week, so frustrating

Something else being blamed on Covid. So I will be getting mine the end of February then, and not the first week of January as promised?

What else is there? Its a pandemic no one anticipated. It's something that is causing a lot of disruption. It's not being blamed on covid for the sake of it. It's being blamed by covid because it is the cause of the delays.
No one uses covid just for fun. It isn't a fun thing its a devastating virus.

Yes I know it’s a terrible virus, and I know the full story of it with a member of the family working on a vivid ward. But with a lot of companies it’s the easy excuse and a lot of cases it’s causing problems everywhere, but I have had experience that it’s been used as a excuse and then I found out the truth that they had lost my order. I can go to Apple and get the phone I’ve ordered no problem

I've checked Apple website myself a lot of their iPhones 12's in many variants are a long wait.
But if you can get it from Apple go ahead. Cancel the order from EE and go to Apple.
You can pay monthly with them then you can get a sim only deal with which ever network you want.
