You can unpair the watch from your iPhone in the Watch app on your phone, which will back up your watch settings at the same time, then you can pair it to her iPhone.
If you have a data plan, that wouldn't carry over, and if it is needed, one would need to be set up through her phone if is available with her current provider and plan.

The Apple Watch would be paired to a phone rather than a SIM.
Are you wanting to use it with another iPhone?

Yes I do. I would like to lend it to my granddaughter whilst she’s working away for a few weeks

My pleasure @Daisy1955.
She would still be able to use it without a data plan, it just means that some features wouldn't work if the watch was away from her iPhone. If she has them together, or doesn't need data on the watch, she can just pair them up.
