Changed my sim only plan to ee but since i've inserted into my phone i can't make or receive phone calls? Help!! I'm rubbish with things like this and i was told it would be good to go.

Was this a change to SIM-only from another EE pay-monthly plan? Or are you porting in from another network?
Does your phone show network coverage? That's a requirement to make & receive calls.

Hi, it was from another network but apparently the PUK number was sorted whilst i was on the sales call.
It occasionally shows ee at the top left of my phone but then disappears!

A PUK is a "Personal Unlock Key" and is used for unlocking a SIM blocked by incorrect PIN entry.
A PAC is a "Porting Authority Code" and used for porting mobile numbers between providers - I think you mean this.
The normal process here is for your new SIM to be supplied with a temporary number. On first connection to EE's network, the phone is fully functional and your PAC is then submitted. That will trigger port-in of your number on the following working day.
Where are you in that process, and what day did you first put your SIM in a phone and connect it to EE's network? Do you know anyone else locally who uses EE, and do they have any service issues?
