Welcome to the community.
Further to the great advise from @Hello5067, once you have the PAC you can also arrange the transfer by texting PORT to 150 from the EE SIM or through an online form.

With your o2 sim in the phone text PAC TO 65075 and it will send your pac code to keep your old number. Alternately call o2 and ask for your pac code and they will give you it.
once you have done that call Ee and give them the pac code and the number will be transferred across within about 24-48hrs (exc weekends) once the Ee sim is activated.
