While in Ireland in motorhome would it be possible to get an unlimited data sim for my mobile phone to use as hotspot for my smart TV?

In principle, yes. But EE is a UK operator and when abroad you are roaming - "inclusive roaming" data usage is limited to an FUP of 50Gb a month.

If in Ireland, you will probably be better off having a subscription with an Irish operator.
