I have this included but still had to buy a roaming add on which cost me £2.36 a day?! I was in EU countries (Palma, Monaco, Valencia, Barcelona, Italy)
I mean what exactly does the full roaming do ?! It’s very misleading and there is no description anywhere for it.
please give me a complete breakdown of what this service is and what it actually covers.

Click on the add-on, and it should give a brief description. I suspect it will say "Enables the full roaming & IDD experience", in which case it refers to the roaming facility allowing your phone access to foreign networks.
Roaming in the EU is on a flat-rate basis. By that, you don't pay per-minute or per-text but a flat-rate per day/week/month for access to your UK call, text & data allowances.
You can choose a 7 or 12 day passes, or your plan may have a permanent add-on included. If none of these apply, then a daily £2.59 charge is the fallback position. Flat-rate inclusive roaming means incoming & outgoing (within the EU & UK) calls, outgoing text messages, and use of your data allowance upto a 50GB FUP, is all zero-rated.

This just enables roaming, not allowing roaming "for free". For inclusive roaming, you would also see an add-on like "Roam in EU" or "Roam Further Psss" listed too.

It does give this description however under my partners sim she doesn’t have this option she has eu roaming and we both had to pay for the same passes abroad? This seems very misleading

That is a version of the same thing, it gives the ability to connect to EU networks but not to networks outside of the EU Zone.
The "free roaming" add-ons (Billing add-ons that cover the cost of usage while Roaming) are Roam in EU and Roam Further Pass.

Your partner has the ability to connect to EU-based networks.
This is NOT necessarily the same as having a billing add-on covering the costs of doing so.
Confusing the ability to roam, with having the costs of doing so covered, is a very common mistake.
