Hello, I upgraded my contract yesterday to an iPhone 14 Pro Max - 128 GB - Gold however I would like to amend the upgrade please to iPhone 14 (can I know options of this)

If you ordered online or by phone you may cancel the order FoC before or during the statutory 14-day cooling-off period from delivery & then reorder what you really want.
