How would I go about purchasing an EE data plan for the Pixel Watch 2 LTE (I already have the watch).
Do I need to already an existing EE phone plan or is the watch plan completely separate?

To add the 30-day data plan to use a cellular connection you would need an EE monthly phone or SIM plan.

I'm just coming to the end of my 24 months with a full watch plan (watch and airtime).
I've just set up moving to a personal paired plan when the current contract ends, but I think it might be the wrong plan.
I want the watch to be able to make calls even if my phone isn't with me. What plan should I be on for that, please?

Yes, a personal paired plan would allow you to use your phone's minutes to make calls, even when your phone isn't with you.
