HI i have just upgraded my wifi mini gb from 30gb to 100gb forgot to ask if i will need a new sim card and will it start from today or when my next direct debit is due thanks

If it's an upgrade you should not need a new SIM & it should start immediately. Can't you look in your MyEE & see?

my wifi ee is still only showing my remaining gb of my 30gb data i have upgraded to 100gb this morning so i think this will not start until the remainder of the 30gb is used thanks

Is this on PAYG? Upgrades only happen on contracts.
