I'm on a unlimited iPhone £87 plan but being charged £115 , how am I charged £28 extra?

This is not automatically true across-the-board.
This thread is regarding an Apple phone with which I'm not familiar - however Android phones give you the option of using the Unicode character set which supports emojis as SMS.

@Clay1 Your tariff only covers calls to uk mobiles and none premium rate UK numbers . Text message not MMS ( picture message) the data you use from the allowance can not incur a charge. You are only charged if you require more data and purchase that data before hand.
Your bill breakdown will show what these out of allowance charges are for. If you kept within your tariff allowance you are not charged for anything else. If you have any additional add ons that are chargeable these will show under add ons on your account and you’ll be billed for these also and these will show on the bill breakdown.
