I lost my mobile in the airport in the USA and have had to buy a new one, problem is I cannot seem to find a way to transfer my phone number to this new phone

Your SIM contains your mobile number.
Realistically, if you are now abroad you will struggle to resolve this until you return to the UK. You need to report your phone lost to prevent use by others - https://ee.co.uk/help/mobile/fix-problem/my-device-has-been-lost-or-stolen
If you're using a physical SIM, it can be replaced either via an EE shop or by post to your UK billing address. It can't be sent abroad.
If you're using an eSIM, it will need authenticating using your existing SIM - which will be a struggle whilst abroad.
