Hi I have received my new 5G sim for my replacement iPhone. I am trading in my old iPhone but worried that if I do a factory reset I will loose all my photos?

Have you received your new phone already?
The setup process is really easy if you have both phones together.
You can back your photos up to iCloud if you haven't done so already.

@Cripps Back up your photos on a pc or perhaps via iCloud or any other cloud storage service. Dropbox/One Drive.
PS don’t just factory reset your device as that device will still be attached to your iCloud account. You need to go to settings first then click your name at the top then click Sign Out. Now you can factory reset the device

What's the reason for getting a replacement phone/SIM?
There's no such thing as a 5G SIM, all EE SIMs are capable of working on all technologies from 2G > 5G, providing the plan and device are both 5G-enabled.
Often the easiest way to upgrade a phone is just to use an existing working SIM in a new phone.
